Mirchi Ka Salan



Ingredients :

Jalepenos 8
Tomatillos 3
Tomato 1
Onion 1
Coconut powder
Peanuts 3/4 cup
Sesame seeds 1 tbsp
Corriander powder 1/2 tsp
cumin seeds
mustard seeds
curry leaves
corriander leaves
cloves 4
cinnamon stick 4
Ginger garlic paste 2 tsp
Garam masala powder 1/4 tsp
bay leaf 1
cardamom 2
Tamarind
Oil
Salt

Procedure :

Split opn the jalapenos and remove the pith and the seeds.
Cut open the tomatillos into 4 on one side only, leave the other end intact.
Dry roast peanuts, red chilli, cloves, cinnamon, cardamom, bay leaf, and sesame seeds in a non stick pan. 
Grind them up into fine paste.
Soak tamarind and extract the pulp.
To the pan, Add 3 tbsp of oil. Cover and cook the split jalapenos and tomatillos till they are tender and set them aside. They should not fall apart.
To the same pan add mustard seeds, curry leaves, cumin, and then saute the onions. Add tomatoes and cook till they are fully done.
Add garam masala, salt, corriander powder, coconut powder/milk, and the above peanut-sesame paste.
Add the tamarind juice and some water if necessary to make nice smooth gravy.
Now add the fried jalapenos and tomatillos to the gravy and cook till oil seperates. 
Garnish the way you like and its the best when served with hyderabadi biryani or basmati rice...
Done.

Gobi Manchurian

Ingredients :

Black pepper
Red crushed peppers
Salt
Soy sauce
Red chilli sauce
Cauliflower florets
All purpose flour
Corn starch
Green onions
Onions
Minced garlic
Green chillies

Procedure :

Make batter out of All purpose flour, black pepper, salt, and corn starch. The batter should not be too thick or thin.
Now dip the florets in the batter and deep fry until they are crispy and golden brown in color.
To make the manchurian sauce, saute onions till they look transparent.
Add green chillies and minced garlic and fry for a couple of minutes.
Now add red crushed peppers, red chilli sauce, soy sauce, and salt.
Mix a tablespoon of corn starch in some water and add it to the above pan.
Keep cooking until the oil seperates and you get the desired consistency for the sauce.
Now add the fried florets to the sauce when it is still hot.
Garnish with green onions and serve...

Vankai Fry / Curry

Ingredients :

8 Indian Eggplants
2 Green chillies
2 Red chillies
1/2 cup Peanuts
1 tbsp Sesame seeds
1 tbsp Urad dal
1 tbsp Split Chenna dal
1 tsp Coriander powder
1/4 tsp cumin seeds
Curry leaves
Mustard seeds
2 garlic pods
1/2 tsp Chilli powder
Turmaric
1 tsp Tamarind paste
Salt
Oil

Procedure :

Split open the eggplants into 4 just like you cut them open for Gutti vankai curry
In a pan roast peanuts, sesame seeds, cumin, urad dal, chenna dal, and red chillies.
Set aside until they cool down and grind them up into fine powder or thick paste.
Add red chilli powder, turmaric, salt, tamarind paste, and coriander powder and mix them all together.
Now stuff the split eggplants with the above paste and set aside.
Heat some oil in the pan and add some mustard and cumin seeds.
When they splutter, add curry leaves and garlic pods.
Fry them up a little and then add the stuffed eggplants one by one.
Cover and cook on low for some time until the eggplants are soft.
Later remove the lid and cook on low till they are completely done.
To try the curry version of the above dish, just add some H2O.. haha
Garnish as u like and serve with hot steamy rice...

Paneer Butter Masala


Ingredients :

1 n 1/2 cup Paneer cubes
1 medium Onion
2 Tomatoes
2 Green chillies
6 Curry leaves
Salt
Oil
2 tbsp Butter
1/2 tsp Chilli powder
1/2 tsp Coriander (Dhaniya) powder
1/4 tsp Cumin (Jeera) powder
1/2 tsp Garam masala
1 tbsp Ginger garlic paste
6 Cloves
4 Cinnamon sticks
2 Cardamom (Elaichi)
4 Cashews
2 Almonds
2 tbsp Yoghurt
1 tbsp fresh cream or some whole milk

Procedure :
Heat a tbsp of butter in a nonstick pan and fry the panner cubes until golden brown.
Remove the fried paneer cubes and set aside.
Put some more oil to the same pan and add curry leaves, cumin seeds, cloves, cardamom, cinnamon, cashews, almonds, green chillies, onions, and ginger garlic paste.
Fry them up until the onions are translucent and then add diced tomatoes, chilli powder, dhaniya powder, cumin powder, garam masala, and salt.
Now when the tomatoes are fully cooked, add yoghurt.
Cook for a couple of minutes until oil starts to seperate.
Now cool the above mixture and grind it into fine paste. Add water if nexessary.
Saute the red peppers in the same pan for a couple of minutes and then pour the paste back into the pan and add the remaining butter and fried paneer cubes to it.
Let it simmer for some time until the peppers and paneer are soft enough and oil starts to seperate.
Garnish with fresh corriander leaves and serve hot with rotis, nan, or fried rice.

Chinese Fried Rice

Chinese Fried rice


Ingredients :

Scrambled Eggs
Diced or Julian Carrots
Peas
Diced beans
Shredded Cabbage
Julian Red/Green Bell peppers
Chopped Green Onion
Oil
Crushed Red peppers
Soy Sauce
Red and Green chilli sauces
Cooked Rice
Procedure :

Heat up a wok or a wide non-stick pan and add some oil and crushed red peppers.
Add green onion, carrots, peas, beans, cabbage, and peppers.
Fry them up until the veggies look tender.
Add cooked rice and the sauces to the above.
keep mixing and adding the sauces until u get the right color and taste. Add salt if necessary.
Now add the scrambled eggs and mix the whole thing again.
Garnish with some chopped green onion and serve when its steaming hot.

Wow... My first blog !!

I can't believe I have my own blog... I wanted to have one since very very long, but could never put my lazy butt to work. About me... right now I am a housewife and a proud mom of lil baby boy Srimaan. Im still not sure what I am going to post on this blog... lets see... may be a few recepies to start with and then tons of pictures ofcourse... catch u later...bye
